Description

Pepper (Piper Nigrum) grows on a flowering vine and there are four varieties that are harvested by hand. The fresh green peppercorns are rarely exported as they do not travel well. Black peppercorns are the most common, red and white peppercorns are hand sorted and therefore much more sought after as they have unique flavour differences and due to their scarcity are correspondingly more expensive.

Kampot White Peppercorns are the most rare and are produced by taking the red fruit and soaking it in a brine, sun-drying them and then hand rubbing off the outer skin revealing the delicate inner fruit that the French use in pastry and even ice cream.
